Sweet Potato Chaat Bites

A little sweet, a little spicy, and completely addictive.

Ingredients
  

Roasting Sweet Potatoes

  • 1 whole sweet potatoes, peeled and chopped into 1 inch cubes
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp garlic powder

Making Sweet Potato Chaat Bites

  • 1 bag plain puri packet (or you can use crackers)
  • 2 cups roasted sweet potatoes
  • 3/4 cup finely chopped red onion
  • 1/2 cup chopped cherry tomatoes
  • 1 tsp cumin powder, chaat masala, and salt
  • 1/4 cup chopped cilantro
  • 2 tbsp tamarind chutney
  • 2 tbsp mint chutney
  • 1 tbsp lemon juice

Optional Garnish Ingredients

  • 2 tbsp sev
  • 2 tbsp yogurt
  • 2 tbsp mint chutney
  • 2 tbsp tamarind chutney
  • 2 tbsp pomegranate seeds

Instructions
 

Roasting Sweet Potato

  • Preheat oven to 400 degrees
  • Toss the cubed sweet potato with olive oil, salt and garlic powder
  • Roast for 30 mins and then set aside to cool

Sweet Potato Chaat Bites

  • Mix all the ingredients together except for the plain puri
  • Lay out the puris on a serving platter and place about 2 tsp of the sweet potato mixture onto each of the puris.
  • If you have the optional ingredients, garnish each bite with yogurt, then the chutneys, pomegranate seeds and then sev.
  • Serve immediately if you can, if you can't then don't add the sev and place them in the fridge for up to an hour. Then before serving, top each puri with some sev to add a refreshing crunch!
