Masala Puffs

Ingredients
  

  • 2 sheets puff pastry
  • 1 whole red potato
  • 1 whole sweet potato
  • 1 medium white onion, finely chopped
  • 2 tbsp olive oil
  • 3 tbsp minced ginger
  • 1.5 tsp salt
  • 8 cloves garlic, crushed
  • 1 tbsp curry powder
  • 1 tbsp garam masala
  • 3 whole green chilis
  • 1/2 cup light coconut milk
  • 1 whole egg
  • 1 tsp turmeric powder
  • 1/4 cup chopped cilantro

Instructions
 

  • Mash both potatoes in a bowl and set aside. 
  • Heat oil in a pan and add onions. Cook until translucent.
  • Add garlic, ginger, curry powder, garam masala, turmeric, salt and green chilis.
  • Mix in the potatoes and coconut milk. Cook for 5-10 mins. Top the mixture with cilantro and allow it to cool in the fridge.
  • Preheat the oven to 400 degrees Fahrenheit. Cut each puff pastry into 9 squares.
  • Put egg wash on the edges, places about 1.5 tbsp of the masala mixture and fold each square to make a triangle. 
  • Using a fork, press on the edges, brush the egg wash on each triangle and bake for 16-18 minutes. 
  • Serve with a spicy mustard sauce or mint chutney
