Masala Puffs

- 2 sheets puff pastry
- 1 whole red potato
- 1 whole sweet potato
- 1 medium white onion, finely chopped
- 2 tbsp olive oil
- 3 tbsp minced ginger
- 1.5 tsp salt
- 8 cloves garlic, crushed
- 1 tbsp curry powder
- 1 tbsp garam masala
- 3 whole green chilis
- 1/2 cup light coconut milk
- 1 whole egg
- 1 tsp turmeric powder
- 1/4 cup chopped cilantro
Mash both potatoes in a bowl and set aside.
Heat oil in a pan and add onions. Cook until translucent.
Add garlic, ginger, curry powder, garam masala, turmeric, salt and green chilis.
Mix in the potatoes and coconut milk. Cook for 5-10 mins. Top the mixture with cilantro and allow it to cool in the fridge.
Preheat the oven to 400 degrees Fahrenheit. Cut each puff pastry into 9 squares.
Put egg wash on the edges, places about 1.5 tbsp of the masala mixture and fold each square to make a triangle.
Using a fork, press on the edges, brush the egg wash on each triangle and bake for 16-18 minutes.
Serve with a spicy mustard sauce or mint chutney
