Preheat oven to 400 degrees Fahrenheit. Toss in all the ingredients for the chickpeas together in a bowl.
Lay on a baking pan with parchment paper. Bake for 20 mins or until crisp.
While the chickpeas are being baked, blend all the ingredients for the avocado sauce together. (You can store this sauce in an airtight jar for 5 days)
To assemble, enjoy on warm tortillas with the avocado sauce spread evenly and topped with the roasted chickpeas. Add fresh pico de gallo or just fresh cut red onions for an extra punch of flavor!
