My Favorite Summer Meal Prep Recipes to Avoid Takeout

Summer always sounds relaxing in theory… until you actually look at the calendar.

Between pool days, playground trips, weekend getaways, birthday parties, cookouts, and trying to soak up every bit of sunshine, dinner somehow sneaks up on me every single day. By the time we’re home, the last thing I want to do is spend an hour in the kitchen.

That’s exactly why every summer I rely on a handful of recipes that have become staples in our house.

Some can be made entirely ahead of time. Others come together in about 30 minutes. Most of them are even better after sitting in the fridge for a day or two, making them perfect for meal prep. And because I’m always cooking for our family, they’re toddler-friendly while still being flavorful enough that the adults actually look forward to eating them.

These five recipes are pretty much on repeat all summer long.

30-Minute Peanut Sauce Noodles

This might be my favorite “I don’t feel like cooking” dinner.

The peanut sauce comes together quickly, stores beautifully in the fridge, and works with just about anything. I’ll toss it with noodles, whatever vegetables I have on hand, and usually some grilled chicken for protein. It also makes an amazing cold noodle salad for lunches the next day.

The best part? Dinner feels homemade even though it takes less time than waiting for takeout.

Orange Ginger Salad Dressing

If you’ve only ever bought bottled salad dressing, this recipe might change your mind.

This bright, citrusy dressing completely transforms a simple salad into something you’ll actually crave. I love pairing it with romaine, spinach, shaved fennel, fresh mint, and grilled lemon chicken for an easy weeknight dinner that somehow feels restaurant-worthy.

I usually make a batch on Sunday, and suddenly salads become the easiest meal of the week.

Mango Lime Chili Salad Dressing

Summer and mangoes just belong together.

This dressing is sweet, tangy, and fresh without being overly heavy. It works beautifully over salads, grain bowls, grilled shrimp, chicken, or even as a drizzle over roasted vegetables.

It’s one of those recipes that instantly makes dinner feel more exciting with almost no extra effort.

Whenever I have ripe mangoes sitting on the counter, this is usually the first thing I make.

Creamy Garlic Zucchini Pasta Sauce

This recipe has quickly become one of my favorite meal prep discoveries.

I make a big batch of the zucchini sauce over the weekend, and throughout the week all I have to do is boil fresh pasta and warm the sauce. Dinner is practically done before the water finishes boiling.

I love serving it with whole wheat pasta, creamy burrata, crispy shallots, and simple grilled chicken for protein.

It’s also one of my favorite ways to sneak a few extra greens into our toddler’s meals without anyone complaining.

Naan Pesto Burrata Pizza

When we want pizza night without actually ordering pizza, this is what I make.

Using naan means there’s no dough to make, no waiting for it to rise, and dinner comes together in minutes. Crispy naan, pesto, creamy burrata, fresh toppings… it feels fancy enough for entertaining but easy enough for a random Tuesday.

It’s one of those recipes everyone gets excited about when they see it on the menu.

My Biggest Summer Cooking Tip

I’ve stopped trying to cook a completely fresh meal every single night.

Instead, I prep the parts that take the most time, dressings, sauces, or even a batch of grilled chicken, over the weekend. During the week, dinner becomes more about assembling than cooking.

It saves time, keeps us from reaching for takeout, and honestly makes the busiest weeks feel so much less stressful.

If you’re looking for a few recipes to keep in your regular summer rotation, these five have been tested over and over again in our house. They’re fresh, family-friendly, easy to prep ahead, and exactly the kind of meals I find myself craving when it’s too hot to spend hours in the kitchen.
